“Baigan Ka Bharta” is a North Indian recipe which is easy to make and provide roasted taste of Brinjal’s.

I can’t wait to share this unique recipe with you all and yes one more thing is that I do prepared a video of cooking baigan ka bharta so it will be real easy to understand the basics of recipe. First of all please understand that the meaning of ‘Baigan’ is Brinjal and ‘Bharta’ is nothing but ‘smashed’.

The key point of this recipe is to grill your Brinjal’s properly till it get coated with carbon and skin of Brinjal’s converts into charcoal. This is will give a smokey taste to dish. It is purely vegetarian dish mostly cooked in India as well as Pakistan.

Cook Time: 15 minutes

Total Time: 45 minutes

Ingredients
  • Roasted and smashed 4 brinjals
  • 2 medium sized chopped onions
  • 1 chopped tomato
  • 1 tbsp ginger garlic paste
  • 5-6 curry leaves/1 tbsp curry powder
  • 1 tbsp cumin seeds
  • 1 tbsp brown mustard
  • 2 tbsp Red chilly powder/ according to taste
  • ½ tbsp Turmeric powder
  • 1 tbsp garam masala
  • Salt to taste
  • Coriander leaves for garnishing

Instructions

  1. First roast the brinjals for around 15-20 minutes till it cover turns to carbon black color.
  2. Till brinjals gets properly roasted chopped onions, tomatoes and coriander . Make ginger and garlic paste.
  3. Once brinjals become roasted from all the sides keep aside for cool.When brinjals become cool pill of the skin and smash the brinjals.
  4. Take a deep pan ,add 4-5 tbsp of oil .Heat it.Once it become hot add curry leaves,brown mustard and cumin seeds.Fry it for a minute.
  5. Now add chopped onions.Fry till it converts into golden brown colour.
  6. Add ginger and garlic paste.Fry for few seconds.
  7. Add chopped tomatoes.Cook tiil tomatoes become smooth.
  8. Now add turmeric powder,Red chilly powder,Garam masala.Fry further for few seconds.
  9. Then add smashed brinjals and salt to taste.Mix it well with other ingredients.
  10. Heat on low flame for 2-3 minutes.Garnish with coriender leaves.Serve hot with chapaties.

Notes –

Make sure to apply light layer of cooking oil to all Brinjal’s prior to roasting it.
